Last Weeks Lunches

Quinoa Falafel and Potatoes Roasted in Duck Fat.

Along with Smoked Duck and Scrambled Eggs with Leeks.

My Plate- Salad, Eggs, Falafel, and Potatoes.

Blanched Scallions with Vinaigrette.

Stew.
And Pesto Mushroom Galette (made my yours truely)


 After making this galette it has become a bit of a tradition to bake our leftovers into a galette. And now when thinking about how to use our leftovers, instead of saying "put and egg on it" we have started saying "put it in a pie."

A Cabbage and Potato Pie and a Creamy Spinach Pie.
As well as homemade Fennel Soda Bread (also made by me).

Pesto Pizza with Beet Greens, Leftover Pie, and more Soda Bread.

 Rene stopped by as we were eating lunch. We offered him a slice of pizza THE PIZZA I MADE, we graciously took a slice but made no comments about its taste, he just continued chatting with us. No comment is better than a negitive review right?? Then he took a hunk of the soda bread I made, ate it, and then nearly took the rest of the loaf! We offered him some olive oil to dip the bread in and he scoffed at the proposition saying "You have olive oil that comes from Norway??" implying that since olive oil is not Nordic he didn't see the need for it.
