Welcome to the Mad Hus a.k.a The Nordic Food Lab.

Mad (m-ah-d) is the Danish word for food and here at the Nordic Food Lab, a self-governed, non-profit organization, we are mad about food. We are a collection of chefs, scientists, anthropologists, and academics exploring traditional and innovative techniques to transform Nordic raw materials and develop knowledge and ideas for the Nordic region and the world.

Welcome on board!

The Nordic Food Lab is on a houseboat in the Christianshavn harbor.

Conveniently located right next to NOMA.

The workspace is unbelievably gorgeous.

All over the boat there are things in boxes, bags, jars, and barrels fermenting, curing, and cooking. The projects are all in various stages of color, odor, and taste (some more appealing than others).

BEAUTIFUL.

I am lucky enough to live on this boat. I have a small room in the basement with a bed, a desk, and other odds and ends. It suits me just fine, and with a view like that ^^ I really can't complain.  

Speaking of beautiful, have a look at the bathroom- a huge brass bathtub, a stone floor, and loads of natural light.
